Lactic Acid

Lactic acid is produced in the muscles when glucose is broken down during strenuous muscular activity. The soreness experienced after prolonged heavy exercise is due to accumulated lactic acid in the muscles. A synthetic form of the lactic acid is commonly used in foods and beverages as a flavoring and preservative, and it is also used in some medications. Lactic acid has been implicated as a trigger for increased anxiety and panic in those with panic disorder.

Lactic acid is naturally present in many foodstuffs. It is formed by natural fermentation in products such as cheese, yogurt, soy sauce, sourdough, meat products and pickled vegetables.
